DUTCH SOUP: ERWTENSOEP

You will find about Dutch cuisine, you often read that such a cuisine “doesn’t exist” at all . Dutch recipes are not so rich. But actually there is a lot of healthy and delicious foods in Dutch cuisine like erwtensoep.
Materials:
- The amount will be 1 kilo (2 trotters, sausage, lamb’s ear, veal or mutton tongue)
- 1/2 kilo of dried peas
- 3 leeks
- 2 stalks of carrots
- 1 coffee cup chopped parsley
- enough salt and pepper
How to cook erwtensoep:
After draining the water of the peas that we soaked overnight, we put them in a pot with 3 liters of cold water and boil them with the lid of the pot closed until the peas become soft. Then we remove the peas with the help of a colander. After crushing it through a fine-mesh strainer, we throw it into the water we take out again and boil it until it thickens.
On the other hand, we clean the legs and ears thoroughly and put them in a pot, add the celery leaves and boil them. 1 hour before taking the trotter off the fire, we throw the thoroughly cleaned tongue into the pot. After 40 minutes, we throw the sausages and the grated carrots after they are scraped. After the meat is cooked, we take the meat out of the water with the help of a colander and set it aside. Then we crush the ones in the pot and pass them through a fine-mesh strainer and add them to the peas. We separate the legs we removed from the bones and slice the sausages and tongue. After cutting the lamb’s ears into small pieces, we throw them all into the soup and boil them together. Finally, we serve the soup, which we put in the serving bowl, by sprinkling the parsley on it. Your lekker soap is ready. Enjoy your Dutch meal.

A new restaurant called Secret Garden has recently opened in the heart of Amsterdam. The interior is a mix of green nature and contemporary art, in an exotic style.
Secret Garden was founded by Roy and Mike Poppes as an internationally focused and experienced restaurant. It opened its doors on the Reguliersdwarsstraat last August.
Its cuisine consists of a mixture of Peru and Japan, which is called Nikkei cuisine. Do you prefer the delicious Salmon Tataki with Honey Miso and passion fruit, or the Rib-Eye with Chimichurry & Crispy quinoa? There is an endless variety of food options.
Secret Garden is more than a restaurant. In addition to the wonderfully diverse cuisine, there is also room for a glass of wine or an exotic cocktail. All this while enjoying the best tunes from Secret Garden’s house DJs.
The name says it all. Besides the bar and restaurant, there is also a secret courtyard. Too Many Agency’s Architect Will Erens has outdone himself this time. Enjoy dinner at the Garden Restaurant, have fun with the DJ at the bar & lounge, have a cocktail in the green room or have a private dinner in the garden room.
